I love to cook, mainly because I love to eat.
I mainly cook Italian, Chinese, Indian & French cuisine. I also bake my own bread. For normal everyday cooking, I rarely cook anything that takes longer than 30 minutes.
For special occasions I cook more complex dishes which take longer.
I hate cooking from recipes. I like to understand how to cook things, so that I can cook without referring to the recipe, and can adjust it according to what ingredients I have, and any preferences, allergies or food-fads that the people for whom I am cooking may have.

A word of warning: I tend not to measure ingredients when cooking, and Sheryl and I like our food spicy, so the quantities in the recipes below should be taken as guidelines only.
In addition I heartily recommend Madhur Jaffrey's Quick & Easy Indian Cookery (a BBC publication), in which most of the recipes take no more than 30 minutes.
