Mexican Pizza |

This is a copycat recipe of the Mexican Pizza served at Taco Bell in the USA (removed from their menu, and then reinstated by popular demand).
Ingredients:
- ½ lb. (250 g) of ground (minced) beef,
- Taco seasoning, to taste,
- 4 flour tortillas (taco size),
- 1½ tablespoons of oil,
- 15 oz. (400 g) can of refried beans,
- ¼ cup of mild salsa (not the kind with liquid),
- 10 oz. (250 g) can of red enchilada sauce,
- 1 cup of shredded/grated strong cheddar cheese,
- ¼ cup of sliced black olives,
- 1 Roma Tomato, chopped,
- Shredded lettuce,
- Some sliced green onions (spring onions),
- ¼ cup of sour cream,
Method
- Gently fry the ground beef and taco seasoning until cooked, breaking up any lumps as it cooks, then set aside,
- Heat a little oil (use just enough oil to grease the bottom of the pan) in frying pan over medium/high heat. Fry each tortilla until lightly browned and crisped,
- Preheat the oven to 375°F (190°C),
- Place a tortilla on greased rimmed baking sheet,
- Top the tortilla with refried beans and spread,
- Layer the meat and salsa onto the tortilla,
- Top with a second tortilla,
- Coat the tortilla with enchilada sauce, then top with shredded cheese, olives, tomatoes and a little more cheese,
- Repeat steps 4 to 8, to make the second Mexican Pizza,
- Bake the pizzas for 5 to 7 minutes to heat and melt the cheese,
- Serve topped with shredded lettuce, sliced green onions and sour cream.
