Calve's Liver with Pasta Recipe |

This is real Italian style liver.
The liver should still be pink inside. If you are squeamish about your liver, this recipe is not for you.
- Thinly slice a leak, and put in a frying pan with 2 tablespoons of olive oil. Add a quarter of a level teaspoon of dried marjoram, and 1 clove of crushed & thinly sliced garlic.
- Begin to fry the contents of the pan on a medium heat, stirring regularly.
- When the leaks start to look cooked, add about 6 ounces of very thinly sliced calves liver.
- Optionally, add 2 medium sized sliced mushrooms.
- Stir continuously, making sure that the pieces of liver all get turned over and cooked on both sides.
- As soon as the liver is lightly browned all over (but still pink inside), add about 1 glass of dry vermouth or white wine.
- Turn off the heat. Stir vigorously for about 1 minute, as the vermouth/wine reduces a little.
- Serve with pasta.
